Healthy Baked Chicken Parmesan

This Baked Chicken Parmesan is from a cooking site I have discovered with amazing recipes, reinvented to be healthier, yet still delicious. I want to cook healthy meals, but do not find it worth the effort, when low fat or low calorie recipes end up with little or no taste. So far every recipe I have tried from Skinnytaste, has been as good, or even better, than the less healthy version. From what I can determine, these recipes seem to use a mix of non fat, low fat or portion controlled regular ingredients, to help keep the food tasty.

I have been visiting my in-laws in Florida for the past few days, and wanted to cook dinner one night. I looked for a healthy version of Chicken Parmesan, since that is one of my father in-laws favorites. This recipe caught my eye and it was as delicious, as it looked on the site. As you can see from my photo, the crust on the chicken becomes crispy, even though it is baked in the oven and not fried. With a side serving of pasta and a big salad, it is a dinner everyone in your family will say is delicious - and you can feel content that the food is healthy too.

Since this is a post about food, this orange tree is one of the things I see, as I lounge by the pool, in Florida. My daughter, Megan, and I are having a relaxing and enjoyable trip. More pictures to come when I return. Have a wonderful start to your week :-)
