Blueberry Maple Overnight Oatmeal

 

 

 

When I made this combination of overnight oatmeal, I wasn't sure if I would like it, but what could I have been thinking? Blueberry and maple syrup give a hint of flavor, reminiscent of the blueberry pancakes I love. This is the perfect breakfast in a jar - its quick, easy and by using sugar free maple syrup, I even made it low carb.

I am a big fan of overnight oatmeal, especially in the summer and I make it quite often. Yes, cold oatmeal can be delicious and this method comes out creamy and ready to eat. The oatmeal soaks up the milk overnight and all the work is done for you. And, the addition of the fresh fruit makes it that much better.

To make this easy and fun breakfast, the night before, pour 1/2 cup oatmeal in a mason jar. Cover with a drizzle of sugar free maple syrup and then pour in 1/2 cup low fat milk. Put a handful of blueberries on top of the milk and oatmeal, then drizzle with more syrup. Screw on mason jar lid and place in fridge overnight. Enjoy the next morning!

  1. Cold oatmeal? Hmmm. I'll have to give it a try. (Although I guarantee the Great Scot won't, anything other than hot oatmeal with a bit of cream is a sacrilege to him, lol.)

  3. I make yogurt parfaits by adding 1/4 cup oatmeal to 3/4 cup of yogurt, then adding fresh and frozen berries. Of course, with that ratio of oats to yogurt, it doesn't have the consistency of oatmeal. It's more adding a bit of fiber and chewiness to the yogurt.

    All that to say, cold oatmeal works for me,. I need to try this for sure.

  7. Hi Vicki, wow this sounds so good, easy and ready to enjoy. I will be trying this for sure. You could probably heat it in the microwave too, couldn't you? if you wanted it hot. But cold for the summer sounds so good. Thank you for sharing.

  8. I've been eating oatmeal for breakfast for about six months now, and I swear it has contributed significantly to a 12 lb. weight loss. I have never tried it cold though! Sounds interesting and I love that you can make it the night before. Anything that makes my mornings easier!

  11. I have never considered eating cold oatmeal but I love oatmeal raisin cookies. this overnight oatmeal sounds like it would be kind of an oatmeal bread pudding with fruit! Yum!
